If you’ve been on Instagram lately, you’ve probably noticed the rise of elevated toast recipes. This peach melba toast is my take on that idea. It’s one of those recipes that feels fancy but takes less than 15 minutes to make.

It’s creamy, sweet, slightly savory, and packed with fresh summer flavor. Think toasted whole grain bread, creamy ricotta, juicy peaches, berries, honey, and herbs layered together into something that looks like it came from a café.

And the best part? You can customize it based on what you have on hand.

What Is Peach Melba Toast?

Classic Peach Melba is a dessert made with peaches, raspberry sauce, and vanilla ice cream. This toast version takes those same flavors and turns them into a more balanced, everyday option.

Instead of ice cream, we’re using ricotta for creaminess and protein. Instead of a sugary sauce, we’re using fresh berries and a drizzle of honey.

The result is a peach melba toast recipe that works for breakfast, a snack, or even a light summer dessert.

Why This Peach Melba Toast Works

This isn’t just trendy toast- it actually has a great nutrition balance:

  • Protein: Ricotta adds staying power
  • Fiber: Whole grain bread + fruit
  • Healthy carbs: Fruit + whole grains for energy
  • Flavor balance: Sweet + creamy + herbal

It’s a great example of how to build a snack that’s satisfying without being overly heavy.

Ingredients You’ll Need

You only need a few simple ingredients:

  • Whole grain baguette or bread, toasted
  • Ricotta cheese
  • Fresh peach, sliced
  • Blackberries (or raspberries for a classic melba twist)
  • Honey
  • Fresh thyme

Easy swaps:

  • No ricotta? Try cottage cheese or whipped goat cheese
  • No blackberries? Use raspberries or strawberries
  • No thyme? Mint or basil works well

Tips for the Best Peach Melba Toast

1. Use ripe peaches

This makes a huge difference. You want them slightly soft and juicy.

2. Toast matters

Go for a golden, crisp texture so the bread holds up under the toppings.

3. Don’t skip the herbs

Thyme (or mint) adds contrast and makes this taste more elevated.

4. Balance the sweetness

If your fruit is very ripe, you can reduce the honey slightly.
